Beef and Sweet Potato Hash with Taco Seasoning

Ingredients

  • For the Hash:
  • 1 lb ground beef (or turkey)
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • For the Avocado Cream:
  • 1 ripe avocado
  • 1/4 cup Greek yogurt or sour cream
  • Juice of 1 lime
  • Salt, to taste
  • Water (to thin, if needed)

Directions

  1. 1. Prepare the Avocado Cream:
  2. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, and salt. Blend until smooth, adding water a tablespoon at a time to reach desired consistency. Set aside.

  3. 2. Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and starting to caramelize. Remove from the skillet and set aside.

  4. 3. Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

  5. 4. Cook the Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

  6. 5. Add Seasoning and Veggies: Stir in the taco seasoning, diced bell pepper, corn, and cooked sweet potatoes. Cook for another 5 minutes, allowing the flavors to meld and the bell pepper to soften. Adjust salt to taste.

  7. 6. Serve: Divide the hash among plates. Drizzle with avocado cream and garnish with fresh cilantro. Serve with lime wedges on the side for an extra citrusy kick.
