This Taco Salad is not only healthy but it is delicious. This is the universal delight of taco night, transformed into a wholesome package you can feel good about devouring it for lunch or dinner. From the juicy meat, Southwest spices, and best taco fixin's, this Mexican-inspired recipe has it all, even the tortilla crunch!
Ingredients
Beef Filling

1.25 lbs lean ground beef or turkey

3/4 cup water

2 Tbsp Taco Seasoning
For Salad
-
1 head of romaine lettuce or iceberg, chopped
-
5 tortilla bowls or 1 bag of tortilla chips

1 cup of shredded cheese (Mexican Blend)

2 roma tomatoes, diced
-
1 avocado, diced
-
5 Tbsp sour cream
-
1/4 cup chopped red onion
Directions
Heat skillet on medium - high heat. Cook beef or turkey until browned. Empty access oils and add Taco Seasoning and water. Stir and cover for a few minutes until meat thickens.
Layer lettuce among individual plates. Top with chips, beef or turkey mixture, cheese, tomatoes, avocado, sour cream and, red onion. Serve immediately.
