3 medium pears, peeled & diced [For Pear Filling]

Directions
Preheat oven to 350°F.
Line an 8×8 pan with parchment.
In a large bowl, mix flour, oats, brown sugar, Lemon Peel, Ground Cinnamon, and salt. [For Crumble Base]
Add melted butter and vanilla; mix until a sandy, moist crumble forms. [For Crumble Base]
Press two-thirds of the mixture firmly into the bottom of the baking pan. [For Crumble Base]
Save the remaining third for the topping. [For Crumble Base]
In a medium saucepan, combine pears, honey or maple syrup, lemon juice, sugar, Ground Cinnamon, Lemon Peel, Freshly Squeezed Lemon granules, and Lavender. [For Pear Filling]
Cook over medium heat for 5–7 minutes, until pears soften slightly. [For Pear Filling]
Stir in cornstarch and simmer 1 more minute until thickened. [For Pear Filling]
Remove from heat. [For Pear Filling]
Spread the warm pear mixture evenly over the crust. [Combine Crumble Base + Pear Filling Here]
Crumble and spread the one-third remaining oat mixture over the top.
Bake for 35–40 minutes, until golden and bubbling.
Cool at least 30 minutes before slicing.
Serve with vanilla ice cream or whipped cream.
