Ingredients
2 large sweet potatoes, peeled and cubed
2 tbsp olive oil
1½ tbsp The Spice Guy’s Al Pastor Blend
Salt to taste
Fresh cilantro for garnish (optional)
Directions
Preheat oven to 425°F (220°C).
Toss sweet potato cubes with olive oil, Al Pastor Blend, and a pinch of salt until evenly coated.
Spread on a baking sheet in a single layer.
Roast for 25–30 minutes, flipping halfway, until tender and caramelized on edges.
Garnish with fresh cilantro if desired and serve warm
