Ingredients
- 4 large portobello mushrooms, cleaned and stems removed
- 1/4 cup olive oil
-
2 tablespoons BBQ spice mix
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions
- Prepare the Marinade: In a bowl, whisk together the olive oil, BBQ spice mix, balsamic vinegar, minced garlic, salt, and pepper until well combined.
- Marinate the Mushrooms: Place the portobello mushrooms in a shallow dish or a resealable bag. Pour the marinade over the mushrooms, ensuring they are evenly coated. Let them marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for deeper flavor.
- Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).
- Grill the Mushrooms: Remove the mushrooms from the marinade and place them gill-side down on the grill. Grill for about 5-7 minutes, then flip and grill for an additional 5-7 minutes, until they are tender and have nice grill marks.
- Serve: Remove from the grill and let cool for a minute. Garnish with fresh parsley and serve warm as a main dish or sliced in a sandwich.
Recipe Note
Customization: Feel free to add other spices or herbs to the marinade based on your taste preferences. Thyme or rosemary can add a lovely aromatic quality.
Serving Suggestions: These mushrooms are delicious on their own or can be served with grilled vegetables, in a burger bun, or alongside a fresh salad.
