Ingredients
2 lbs boneless, skinless chicken thighs
2 tbsp oil (avocado or olive oil work great)
2.5 tbsp Cherry Chipotle blend(M-22)
1 tbsp soy sauce
1 tbsp apple cider vinegar
2 tbsp honey
Optional: fresh chopped cilantro + lime wedges for garnish
1 tbsp Cherry Chipotle blend (M-22)
2 tbsp ketchup or tomato paste
1 tbsp brown sugar
1 tbsp honey
1 tbsp water
Dash of soy sauce or Worcestershire sauce
For Glaze
Directions
Marinate the chicken:
In a large bowl, mix oil, 2.5 tbsp Cherry Chipotle Spice, soy sauce, vinegar, and honey. Toss chicken to coat, cover, and marinate in the fridge for 30 minutes to 2 hours.Make the glaze:
In a small saucepan, combine the glaze ingredients. Simmer over low heat until slightly thickened (5–7 min), then set aside.Cook the chicken:
Grill method: Preheat grill to medium-high. Grill chicken 5–6 min per side, brushing with glaze during the last 2–3 minutes.
Oven method: Preheat oven to 400°F (205°C). Bake on a foil-lined sheet for 20 minutes, brush with glaze, then broil for 3–4 minutes to caramelize.
Garnish & serve:
Hit it with fresh lime juice and a sprinkle of cilantro if you’re feeling fancy. Pairs beautifully with coconut rice, grilled veggies, or even a tangy cherry slaw.
