Ingredients
2 ribeye or strip steaks (about 8 oz each, 1-inch thick)
Fresh herbs for garnish (optional, like thyme or rosemary)
Directions
Prepare the steaks: Pat the steaks dry with paper towels. This helps get a nice crust.
Apply SPG seasoning: Generously sprinkle the SPG seasoning on both sides of the steaks. Press the seasoning gently into the meat so it sticks well.
Preheat your pan: Heat a heavy skillet (cast iron preferred) over medium-high heat until very hot.
Sear the steaks: Add olive oil to the pan and swirl to coat. Place the steaks in the pan and sear without moving for about 3-4 minutes, until a deep crust forms.
Flip and cook: Flip the steaks and sear the other side for another 3-4 minutes for medium-rare. Adjust time based on steak thickness and your preferred doneness.
Add butter (optional): In the last minute of cooking, add butter and spoon it over the steaks to baste for extra richness.
Rest: Remove steaks from the pan and let rest for 5 minutes to allow juices to redistribute.
