1 pound boneless, skinless chicken breasts, sliced into thin strips
2 bell peppers (any color), sliced
1 yellow onion, thinly sliced
2 tablespoons vegetable oil
2 tablespoons fajita seasoning
1 lime, juiced
Flour or corn tortillas
Optional toppings: shredded cheese, sour cream, salsa, guacamole, cilantro
- In a bowl, combine the sliced chicken with 1 tablespoon of vegetable oil, half of the fajita seasoning, and lime juice. Allow it to marinate for at least 15-30 minutes.
In a large skillet or pan, heat the remaining 1 tablespoon of vegetable oil over medium-high heat. Add the sliced bell peppers and onions to the pan. Sprinkle with the remaining fajita seasoning. Cook until the vegetables are tender-crisp, about 5-7 minutes.
Push the vegetables to one side of the pan. Add the marinated chicken to the other side. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Mix the cooked chicken with the sautéed vegetables in the pan. Adjust seasoning if necessary. Warm the tortillas and serve the chicken fajita mixture on the tortillas.
Top the fajitas with your favorite toppings such as shredded cheese, sour cream, salsa, guacamole, and cilantro.
