Ingredients
4 large eggs
4 small flour tortillas
1/2 cup shredded cheese (cheddar or your favorite variety)
1/4 cup diced bell peppers (any color you prefer)
1/4 cup diced onions
1-2 green chilies, finely chopped (adjust to your spice preference)

1/2 teaspoon green chili powder
Salt and pepper to taste
1 tablespoon cooking oil
Optional toppings: salsa, avocado slices, sour cream, chopped cilantro
Directions
Heat oil in a skillet over medium heat.
Add diced onions, bell peppers, and chopped green chilies to the skillet. Sauté until they soften, about 3-4 minutes.
