Chicken Pot Pie Casserole is such an easy way to make Chicken Pot Pie. This crazy good Chicken Pot Pie recipe is the ultimate easy comfort food! Loaded with carrots, peas, chicken, and topped with flakey pie crust.  All the flavor and absolutely none of the fuss.  OBSESSED is an understatement!

Ingredients

  • 1 lb Chicken Breast ( You can use a rotisserie chicken) 

  • 12 oz Frozen Carrots & Peas (thawed)

  • 2 cups Frozen Potatoes (diced & thawed)

  • 1 Onion (diced)

  • 2 cans of Cream of Chicken Soup

  • 1 cup Water

  • 1/2 tablespoon of Mrs. Bash seasoning 

  • 2 cans Refrigerated Crescent Rolls

Directions

  1. Grill chicken breasts if not using a  rotisserie chicken, and let cool.

  2. Grill diced onions and set aside

  3. Cut up chicken into 1/2" cubes or pull apart for rotisserie chicken.

  4. Preheat oven to 350.

  5. Grease a 11x13" baking dish.

  6. Unroll 1 can of crescent rolls and pinch perforations to seal into a sheet. Press into bottom and up sides of prepared disk. Don't worry if sides do not go all the way up.

  7. Bake for 20mins or until crust is light brown & let cool.

  8. In large skillet, combine chicken, onion, potatoes, carrots, peas, and water.

  9. Stir over med heat until all ingredients are warm.

  10. And cans of soup and Mrs. Bash Seasoning, and cook for about 5mins.  If sauce gets too thick add just a little more water.

  11. Pour mixture over crust

  12. Unroll the other can of crescent rolls and place over the top of chicken mixture and press into sides of dish.

  13. Bake for another 25mins and enjoy!
