Ingredients

2 ribeye or NY strip steaks (1–1.5” thick)

1.5 tbsp Roadhouse Steak Blend

1 tbsp olive oil

4 scallions
-
4 tbsp unsalted butter

Zest of 1 lemon

Optional: cracked black pepper to finish
Directions
Rub it down: Pat steaks dry and rub each side with olive oil. Coat generously with Roadhouse Steak Blend. Let rest at room temp for 30 minutes.
Make the butter: While steaks rest, char scallions in a hot skillet or on a grill until nicely blackened and soft (about 3–4 minutes). Chop finely and mix into butter with lemon zest. Set aside.
Sear the steaks: Heat a cast-iron skillet or grill to high heat. Sear steaks 3–4 minutes per side (or until your desired doneness), letting that sugar-coffee combo build a rich crust.
Rest + serve: Let steaks rest for 5–10 minutes, then top with a generous dollop of charred scallion butter.
