Ingredients
1½ lbs boneless, skinless chicken thighs or breasts, cut into 1.5” chunks
2 tbsp Honey Thai Bangkok Blend
2 tbsp oil (avocado or sesame works great)
1 tbsp soy sauce
1 tbsp lime juice
1 tsp grated fresh ginger (optional)
Fresh cilantro, chopped (for garnish)
Bamboo or metal skewers
Directions
Marinate: In a large bowl, mix the oil, soy sauce, lime juice, Honey Thai Bangkok Blend, and ginger. Toss in the chicken pieces and marinate for at least 30 minutes (or up to 2 hours) in the fridge.
Skewer: Thread marinated chicken onto skewers.
Grill or Cook: Heat a grill or grill pan to medium-high. Cook skewers for 4–5 minutes per side, or until chicken is cooked through and nicely charred.
Serve: Garnish with chopped cilantro and serve with lime wedges. Perfect with jasmine rice, coconut rice, or a Thai cucumber salad.
