Ingredients
4 cups corn (fresh, grilled, or frozen & thawed)
1/4 cup mayonnaise or Greek yogurt
Juice of 1 lime
2 tablespoons chopped fresh cilantro
1/4 cup crumbled cotija or feta cheese
1 ½ teaspoons Electric Green Spice
Optional: 1 jalapeño, finely diced
Optional: 1 avocado, diced
Directions
In a large bowl, mix corn, mayo (or yogurt), lime juice, and Electric Green Spice until fully coated.
Add in cilantro, cheese, and jalapeño if using. Toss gently.
