This bold, smoky, and spicy dish uses the iconic Blackened Red Fish Magic seasoning to create a dark, crispy crust that locks in flavor and moisture. It pairs perfectly with any protein (fish, chicken, steak) and hearty vegetables. The high heat “blackening” technique gives a dramatic sear and complex flavor without overcooking the interior. Serve with a fresh squeeze of citrus or a simple cream sauce for balance.
Ingredients

4 fish fillets (6–8 oz each; redfish, snapper, salmon, cod, or halibut)

2–3 Tbsp Blackened Red Fish Magic spice blend

3 Tbsp unsalted butter, melted

Optional: Lemon wedges, for serving
Directions
Prep: Pat the fish fillets dry with paper towels.
Brush both sides with melted butter.
Sprinkle Blackened Red Fish Magic generously on both sides. Set uncooked seasoned fish aside.
Heat a cast-iron skillet over high heat until very hot (almost smoking). (!) Turn on a vent or open windows—there will be smoke.
Place fillets seasoned-side down into the hot skillet.
Cook undisturbed for about 2–3 minutes until a dark crust forms.
Carefully flip and cook another 2–3 minutes on the other side until the fish is opaque and flakes easily.
Plate each blackened fish fillet alongside a scoop of your favorite veggies.
Recipe Note
Fish selection: Redfish or snapper are ideal, but salmon and cod also work well. Just make sure the fillets are skinless and at least ½-inch thick.
Don't overcrowd: Cook in batches if needed so the fish sears, not steams.
