These Pumpkin Pie Spice Waffles are crisp on the outside, tender and slightly fluffy on the inside, and infused with warm, warming spices from The Spice Guy Pumpkin Pie Spice blend. Serve them in autumn or all year long with maple syrup, whipped cream, or a drizzle of spiced butter. They also make a lovely base for fall brunches or holiday breakfasts!

2 cups (240 g) all-purpose flour

2 tablespoons brown granulated sugar

1 tablespoon baking powder

½ teaspoon salt

2 teaspoons The Spice Guy Pumpkin Pie Spice

2 large eggs

1¾ cups milk (or any milk substitute)

¼ cup melted butter (or vegetable oil for dairy-free)

1 teaspoon vanilla extract
Directions
Preheat and prepare waffle iron. Preheat your waffle maker according to manufacturer instructions (medium-high). Lightly grease or spray with nonstick spray.
Mix dry ingredients. In a large bowl, whisk together the flour, sugar, baking powder, salt, and TSG Pumpkin Pie Spice.
Mix wet ingredients. In another separate bowl (or large measuring cup), beat the eggs, then whisk in milk (or milk alternate), melted butter, and vanilla extract.
Combine wet + dry. Pour the wet mixture into the dry ingredients. Stir gently until just combined. The batter should be slightly lumpy; don’t overmix (that leads to tough waffles).
Cook waffles. Pour batter into the preheated waffle iron (about ½ to ¾ cup per waffle, or as recommended for your machine).
Close waffle iron and cook until golden brown and crisp (usually 3–4 minutes, but check your waffle maker’s indicator).
Finish and serve. Carefully remove the waffle, and keep warm (in a low oven ~200 °F / 90 °C) while cooking the rest.
Serve immediately with maple syrup, whipped cream, sliced fruit, or spiced butter.
Recipe Note
Pumpkin purée option: Adding about ¼ cup of pumpkin purée will deepen the pumpkin flavor and slightly moisten the batter. If you use purée, you might reduce the milk by 2–3 tablespoons to maintain batter consistency.
