Stop making boring grilled cheese. Of course, grilled cheese is great but we can do better than just 2 slices of bread with cheese in the middle. Try this recipe to spice it up and make the best grilled cheese of your life. This pesto and pancetta grilled cheese will change how you view the grilled cheese sandwich.
Ingredients

1 loaf of bread (any kind you like)

2 tablespoons butter

2 cups basil
-
¼ cup olive oil
-
¼ cup pinenuts
-
¼ cup parmesan cheese
-
½ cup lemon juice
-
3 Tablespoons Roasted garlic blend

1 ball mozzarella
-
½ pound of pancetta
-
1 cup spinach
Directions
Add Basil, parmesan cheese, olive oil, pinenuts, lemon juice and roasted garlic blend to a blender and blend into a paste
Add butter to a heated pan and melt
Add pancetta to pan, cook till crispy and remove from pan
Place 2 slices of bread in pan, toast till golden brown and remove from pan
Add spinach to pan and cook down
Place slices of bread on a baking sheet
Add pesto to each slice of bread and and top with chopped mozzarella, crispy pancetta and cooked spinach
Bake in oven at 375 for 10 min
Serve hot and enjoy!
