Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
-
1 teaspoon cumin
-
1 teaspoon paprika
-
1 teaspoon habanero powder
2 oranges, peeled and diced
1 red onion, diced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Directions
Preheat the oven to 375°F (190°C).
In a small bowl, mix together salt, pepper, garlic powder, cumin, paprika, and habanero powder.
Rub the spice mixture all over the chicken breasts.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear the chicken breasts for 2-3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
In a separate bowl, combine diced oranges, red onion, cilantro, lime juice, salt, and pepper to make the citrus salsa.
Serve the spicy habanero chicken topped with citrus salsa.
Recipe Note
This dish pairs well with steamed white rice or a side of roasted vegetables. If you prefer a milder heat, you can reduce the amount of habanero powder or substitute it with a milder chili powder. You can also add more citrus fruits or different herbs to the salsa for a different flavor profile. Chopping up an avocado or pineapple with your salsa gives it a unique flavor as well. Enjoy your meal!
