Colorado Chicken & Veg One‑Pan Skillet

Ingredients

  • 1.5 lbs boneless, skin-on chicken thighs or breasts

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 zucchini, sliced

  • 1 small red onion, chopped

  • 2 tablespoons olive oil

  • 2 tablespoons Colorado Chicken & Veg seasoning

  • Juice of ½ lemon (optional)

  • 1 tablespoon Black Sesame Seed

Directions

  1. Prep & season:
    Pat the chicken dry. In a large bowl, toss the chicken and vegetables with olive oil and Colorado Chicken & Veg seasoning until well coated.

  2. Cook chicken:
    Heat a large skillet over medium-high heat. Add the chicken pieces and cook for about 5–7 minutes per side, until golden and cooked through. Remove from skillet and set aside.

  3. Sauté veggies:
    Add veggies to the same skillet and cook for 6–8 minutes, stirring occasionally, until tender and caramelized.

  4. Combine & finish:
    Return the chicken to the skillet, stir everything together, and cook an additional 2 minutes. Squeeze lemon juice over it if using.

  5. Serve:
    Garnish with sesame seeds, and serve directly from the pan over rice, quinoa, or enjoy as is.
