1.5 lbs boneless, skin-on chicken thighs or breasts

1 red bell pepper, sliced

1 green bell pepper, sliced

1 zucchini, sliced

1 small red onion, chopped

2 tablespoons Colorado Chicken & Veg seasoning

Juice of ½ lemon (optional)

Directions
Prep & season:
Pat the chicken dry. In a large bowl, toss the chicken and vegetables with olive oil and Colorado Chicken & Veg seasoning until well coated.Cook chicken:
Heat a large skillet over medium-high heat. Add the chicken pieces and cook for about 5–7 minutes per side, until golden and cooked through. Remove from skillet and set aside.Sauté veggies:
Add veggies to the same skillet and cook for 6–8 minutes, stirring occasionally, until tender and caramelized.Combine & finish:
Return the chicken to the skillet, stir everything together, and cook an additional 2 minutes. Squeeze lemon juice over it if using.Serve:
