French Kiss Salmon with Garden Veggies

Ingredients

  • 4 salmon fillets (6 oz each)

  • 2 tbsp olive oil, divided

  • 2 tbsp French Kiss Blend

  • 1 lb baby potatoes, halved

  • 1 lb green beans, trimmed

  • 1 lemon, thinly sliced

  • 1 tbsp butter

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional garnish)

Directions

  1. Prep the Potatoes
    Preheat your oven to 400°F (200°C). Toss the baby potatoes with 1 tablespoon olive oil, a pinch of salt, and half the French Kiss Blend. Spread on a baking sheet and roast for 15 minutes.

  2. Add Green Beans
    Toss the green beans with a drizzle of olive oil, a pinch of salt, and pepper. Add them to the baking sheet with the potatoes. Roast for an additional 10 minutes.

  3. Season the Salmon
    While the veggies are roasting, pat the salmon fillets dry with a paper towel. Rub each fillet with the remaining olive oil and sprinkle generously with the rest of the French Kiss Blend.

  4. Roast the Salmon
    Nestle the salmon fillets onto the baking sheet with the vegetables. Top each fillet with a slice of lemon and a small pat of butter. Roast for 12–15 minutes, or until the salmon flakes easily with a fork.

  5. Serve
    Plate the salmon with the roasted potatoes and green beans. Garnish with fresh parsley if desired.
