Meatless Bacon Carbonara

The ultimate comfort food! Paired with delicious savoury, salty bacony mushrooms, this dish has great texture and will satisfy your taste buds! This dish has all the flavors of bacon without the bacon making it a vegetarian favorite!
1 pack of Spaghetti
10 shiitake mushrooms, sliced
1 Tbsp Bacon Pow
1/4 cup olive oil
2 cups half and half
2 large egg yoks
1 1/2 cups of parmesan cheese
1 tsp freshly ground pepper
4 Tbsp basil
Bring a large pot of salted water to boil over high heat. Add the pasta and cook according to package instructions. Drain and set aside.
Add the mushrooms, olive oil, and bacon pow to a large skillet and saute over medium-low heat, until cooked. Transfer the mushrooms to a bowl using a slotted spoon.
Add the half and half to the skillet and bring to a simmer. Whisk the egg yolks into the sauce. Whisk in the Parmesan cheese. Stir in the black pepper.
Add the cooked spaghetti, mushrooms, and basil to the skillet and toss well to combine.
Garnish with more Parmesan cheese if desired and serve immediately.
